LE CIABATTE DI SANT’ANTONIO ABATE,DOLCE TIPICO EMILIANO.
Ingredienti:
150grammi di zucchero
1 pizzico di sale
300grammi di farina
2 uova
½ bustina di lievito per dolci
100grammi di burro
200 grammi di mandorle sgusciate
200 grammi di cioccolato fondente
in una ciotola setacciamo la farina,formiamo una fontana ed uniamo il burro freddo a pezzi il sale e le uova; amalgamiamo uniamo lo zucchero e il lievito per dolci. Lavoriamo e suddividiamo l’impasto in due;sciogliamo a bagnomaria a fuoco dolce, facciamolo freddare ed uniamolo ad un solo impasto. Mettiamo i due composti a riposare in frigorifero per trenta minuti: Stendiamo prima l’impasto neutro e cerchiamo di ritagliare delle ciabatte o dei calzari; con quello al cioccolato formiamo una fascia che andrà a formare la tomaia delle ciabatte del santo. Dopo aver assemblato le nostre ciabatte, decoriamole con striscioline di mandorle e sistemiamole in una teglia imburrata:cuociamo in forno a 180 gradi per 15 minuti.
